Indian Spiced Turkey Meatloaf
- 3 lb ground turkey; preferably white and dark meat mix
- 1 yellow bell pepper; small dice
- 3 oz shallots; minced
- 2 bunch scallions; small dice
- 1 leek; small dice
- 5 oz dried apricots; small dice
- 5 oz dried mango; small dice
- 3 tbsp garam masala
- 1 tbsp ground coriander seed
- 1 tbsp dried basil
- 1 tbsp thyme; minced
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp celery seed
- 2 tsp white pepper
- 1 egg
- 1/2 cup breadcrumbs
- 1 salt
- Combine all ingredients in a large mixing bowl.
- Mix well.
- Bake uncovered at 350 for approximately 45-50 minutes or until thermometer reaches 165
- Variations; Sage, applesauce, parsley, ginger, cinnamon, star anise, cumin, cayenne pepper, fennel, cilantro, bacon, celery, carrots
- Tip: Try toasting the dried spices in a dry saute pan for a different flavor profile!
