Easter Sponge Cookies Recipe
- 1 c. shortening
- 1 c. sugar
- 4 Large eggs
- 1 tbsp. vanilla
- 4 c. all-purpose flour, sifted
- 5 teaspoon baking pwdr
- Cream shortening, gradually adding sugar till combined.
- Add in Large eggs, one at a time, and vanilla.
- Blend in 2 c. of the flour and the baking pwdr.
- Beat, then add in 2 more c. of flour, beating till mix is stiff.
- Drop by heaping teaspoonfuls onto greased cookie sheet and bake at 375 degrees 10 - 12 min.
- Ice cookies while hot and sprinkle with candy confetti.
- Makes 80 - 90.
