Colorful Heirloom Bruschetta
- 1 12 cups chopped heirloom tomatoes
- 23 cup chopped green onion
- 2 garlic cloves, minced
- 12 teaspoon fresh basil, chopped
- 2 tablespoons fresh parsley, chopped
- 14 teaspoon salt
- 14 teaspoon pepper
- 2 tablespoons olive oil
- 2 tablespoons vinegar
- seeded sourdough baguette
- Choose firm, ripe tomatoes in a variety of colors.
- Toss the chopped tomatoes, onions, and garlic together with the fresh herbs, salt and pepper.
- Whisk the olive oil and vinegar till blended and pour over the tomato mixture, and stir mixture well.
- Store in the refrigerator to marinate for at last 1 hour, turning over the ingredients occasionally.
- Spoon over toasted bagette slices, or set out in a pretty bowl with a spoon and let guests serve themselves.
- For variety, add very thin mozarella slices.
