Enchilada Pie
- 1 lb ground turkey
- 1 package dry enchilada mix
- 13 cup onion, chopped
- 1 teaspoon minced garlic
- 12 teaspoon salt
- 1 can tomatoes and green chilies
- 2 cups cooked rice
- 1 teaspoon parsley, chopped
- 1 cup tomato juice
- 4 ounces shredded cheddar cheese or 4 ounces monterey jack cheese
- Preheat oven to 350 degrees.
- Cook turkey with onions and garlic.
- Add remaining ingredients.
- Pour into casserole dish.
- Bake for 20-30 minutes.
