TAZO ZENTM Blueberry Cake
- 1 cup milk
- 1 filterbag TAZO ZENTM Green Tea
- 2 cups flour
- 2-1/2 Tbsp. baking powder
- 1/2 tsp. salt
- 1/3 cup butter, softened
- 1-1/4 cups sugar
- 1 egg
- 1 tsp. vanilla
- 1 cup fresh blueberries Whole Foods 3 For $10.00 thru 02/09
- 1 Tbsp. sugar
- Heat oven to 350 degrees F.
- Bring milk to simmer in saucepan on low heat.
- Add filterbag; remove from heat.
- Let stand until milk is cooled.
- Discard filterbag.
- Line 9-inch square pan with foil, with ends of foil extending over sides; spray with cooking spray.
- Mix flour, baking powder and salt.
- Beat butter and 1-1/4 cups sugar in large bowl with mixer until light and fluffy.
- Add egg and vanilla; mix well.
- Add flour mixture alternately with milk, beating well after each addition.
- Gently stir in berries.
- Pour into prepared pan.
- Sprinkle with 1 Tbsp.
- sugar.
- Bake 40 to 45 min.
- or until toothpick inserted in center comes out clean.
- Cool cake in pan 10 min.
- Use foil handles to lift cake from pan to wire rack; cool completely.
- Remove foil before cutting cake to serve.
