TAZO ZENTM Blueberry Cake

  1. Heat oven to 350 degrees F.
  2. Bring milk to simmer in saucepan on low heat.
  3. Add filterbag; remove from heat.
  4. Let stand until milk is cooled.
  5. Discard filterbag.
  6. Line 9-inch square pan with foil, with ends of foil extending over sides; spray with cooking spray.
  7. Mix flour, baking powder and salt.
  8. Beat butter and 1-1/4 cups sugar in large bowl with mixer until light and fluffy.
  9. Add egg and vanilla; mix well.
  10. Add flour mixture alternately with milk, beating well after each addition.
  11. Gently stir in berries.
  12. Pour into prepared pan.
  13. Sprinkle with 1 Tbsp.
  14. sugar.
  15. Bake 40 to 45 min.
  16. or until toothpick inserted in center comes out clean.
  17. Cool cake in pan 10 min.
  18. Use foil handles to lift cake from pan to wire rack; cool completely.
  19. Remove foil before cutting cake to serve.
