Eggs Benito

  1. Heat oil in pan over medium.
  2. Add bell pepper and onion; saute 5 minutes.
  3. Add garlic, and cook 30 seconds.
  4. Stir in tomatoes; simmer 10 minutes.
  5. Season with hot sauce, salt and pepper.
  6. Fill pot with 2 inches water.
  7. Add vinegar, and bring to a simmer.
  8. Reduce heat to medium low.
  9. Crack one egg into bowl, then pour into pot.
  10. Repeat with remaining eggs, and poach 3 minutes.
  11. Remove with slotted spoon.
  12. Meanwhile, toast muffins, then put a few avocado slices on each half.
  13. Top each with an egg and 1/4 cup sauce, and serve.
