Cheese and Chive Souffle Oysters

  1. PLACE the oysters on baking trays lined with rock salt.
  2. COMBINE the PHILLY with the cheese, chives and yolks.
  3. Beat the egg whites in a separate bowl until stiff peaks form then gently fold through PHILLY mixture.
  4. TOP each oyster with a spoonful of PHILLY mixture and bake in a hot oven 200C for 510 minutes until golden and puffed.
  5. Place on a serving platter lined with rock salt.
  6. Serve immediately.
  7. HANDY TIP: This recipe is perfect to serve as an entree for 4 people.
