Spinach Mayonnaise
- 1/4 pound spinach, tough stems and blemished leaves removed
- Salt to taste if desired
- 1 cup mayonnaise, preferably homemade
- Lemon juice to taste
- Drop spinach into boiling water to cover with salt.
- Let cook about 1 minute and drain.
- Run under cold running water and press to extract excess liquid.
- Chop spinach as finely as possible or process it in a food processor or electric blender.
- Blend with mayonnaise.
- Add lemon juice.
