Spinach Mayonnaise

  1. Drop spinach into boiling water to cover with salt.
  2. Let cook about 1 minute and drain.
  3. Run under cold running water and press to extract excess liquid.
  4. Chop spinach as finely as possible or process it in a food processor or electric blender.
  5. Blend with mayonnaise.
  6. Add lemon juice.
