Mom's Sweet Potatoes

  1. Take a large pot of water on the stove at high heat.
  2. Meanwhile, wash and peel sweet potatoes.
  3. Then cut potatoes into quarters and place potatoes in the pot once the water is boiling.
  4. Reduce stove temperature to medium high.
  5. Boil about 20 minutes or until potatoes are done.
  6. Cut butter in chucks and place back into the refrigerator.
  7. Spray a oven safe pan with Pam and set aside.
  8. Once potatoes are done, strain and let cool until easy to handle.
  9. Then cut yams into medium-sized checks.
  10. Preheat oven to 350.
  11. Place chunks into pan.
  12. Add in seasonings, crushed pineapple with juice, chopped walnuts, and maple syrup.
  13. Coat well.
  14. Scatter top with butter chunks and bake at 350 for 25 min.
  15. After 25 minutes, take out of oven and top with marshmallows.
  16. I use the whole bag but you can use less.
  17. Place back into the oven for additional 5 minutes or until marshmallows are golden brown.
  18. Enjoy!
