Chicken & Tomatoes Over Fettucini Recipe

  1. Drain tomatoes, reserving oil.
  2. Coarsely chop tomatoes, set aside.
  3. Heat 1 Tbsp.
  4. reserved oil from tomatoes in a large skillet.
  5. Saute/fry onion and garlic in warm oil till tender.
  6. Add in chicken and saute/fry 8 min or possibly till tender.
  7. Add in basil and reserved tomatoes.
  8. Saute/fry an additional 2 min.
  9. Add in salt, pepper and an additional 2 Tbsp.
  10. reserved oil from the dry tomatoes.
  11. Cook fettuccine according to package omitting salt.
  12. Drain well and place on large platter.
  13. Spoon chicken over fettuccine and toss well.
  14. Serves 4.
