Chicken & Tomatoes Over Fettucini Recipe
- 8 ounce. oil packed sun dry tomatoes
- 1/2 c. minced onion
- 2 cloves garlic, chopped
- 4 chicken breast halves, skinned, boned & cut into strips
- 3 tbsp. minced fresh basil or possibly 1 tbsp. dry whole basil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 6 ounce. fettuccine
- Drain tomatoes, reserving oil.
- Coarsely chop tomatoes, set aside.
- Heat 1 Tbsp.
- reserved oil from tomatoes in a large skillet.
- Saute/fry onion and garlic in warm oil till tender.
- Add in chicken and saute/fry 8 min or possibly till tender.
- Add in basil and reserved tomatoes.
- Saute/fry an additional 2 min.
- Add in salt, pepper and an additional 2 Tbsp.
- reserved oil from the dry tomatoes.
- Cook fettuccine according to package omitting salt.
- Drain well and place on large platter.
- Spoon chicken over fettuccine and toss well.
- Serves 4.
