Sausage Tortellini Soup
- 5 cups frozen cheese tortellini
- 1 lb hot Italian sausage
- 2 tablespoons olive oil
- 1 34 red onions
- 10 garlic cloves (more to taste)
- 16 cups chicken broth
- 2 cups milk
- 2 cups dry white wine
- 12 cup parmesan cheese
- sage
- salt
- pepper
- red pepper flakes
- parsley
- Heat oil in stockpot.
- Add sausage (defrost if necessary), chopped onions, and garlic.
- Cook on medium until sausage is cooked.
- Once cooked, add wine.
- Deglaze anything stuck to the bottom of the pot.
- Add half the chicken broth and heat to simmer.
- Add milk and Parmesan cheese, stir to dissolve.
- Add remaining chicken broth.
- Simmer for 20-30 minutes.
- Add tortellini and simmer soup until cooked (approximately 30 minutes).
- Ready to serve.
