Pear and Blueberry Waffles
- 1 1/2 cups SR flour, sifted
- 2 tablespoons sugar
- 1 egg
- 1 1/4 cups low fat milk
- 2 egg whites, beaten until stiff
- 150g PHILADELPHIA Light Spreadable Cream Cheese
- 2 tablespoons maple syrup
- 425g can pears, thickly sliced Safeway 1 lb For $1.88 thru 02/09
- 1 punnet blueberries
- Extra maple syrup, for drizzling
- Combine flour and sugar in a bowl, gradually whisk in egg and milk until smooth.
- Gently fold through the egg whites.
- Divide batter into 6 then pour 1/6 of the batter into a lightly oiled waffle maker and cook until golden.
- Repeat to make 6 waffles.
- Mix Philly* and maple syrup together until smooth.
- Spread Philly* mixture onto waffles.
- Top with pear slices and blueberries.
- Drizzle with maple syrup and serve.
