Brown's Whole Wheat Waffles
- 2 cups whole wheat pastry flour
- 3 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt (optional)
- 1 tsp. active dry yeast
- 1/4 cup water
- 1 tsp. honey
- 1/2 cup cooked oat bran*
- 1 cup low-fat soy milk
- 1 tsp. lemon juice
- Combine the first four ingredients and set aside.
- Combine yeast, water, honey and cooked oat bran and let rest a few minutes.
- Then add the soy milk and lemon juice, mix well, and combine with the dry ingredients.
- Pour into a hot waffle iron and cook for 7 minutes.
- Serve with pure maple syrup, unsweetened applesauce and cinnamon, or no-sugar pure fruit jam.
