Double Layer Lemon-Lime Bars
- 35 vanilla wafers, finely crushed
- 1/4 cup (1/2 stick) margarine or butter, melted
- 1/4 cup sugar, divided
- 1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
- 2 Tbsp. lime juice Safeway 3 ct For $1.00 thru 02/09
- 1 cup cold milk
- 2 pkg. (4-serving size each) JELL-O Lemon Flavor Instant Pudding
- 2 tsp. grated lime zest Safeway 3 ct For $1.00 thru 02/09
- 2 cups thawed COOL WHIP Whipped Topping
- Mix wafer crumbs, margarine and 2 Tbsp.
- of the sugar until well blended; press firmly onto bottom of 9-inch square pan.
- Beat cream cheese, remaining 2 Tbsp.
- sugar and the lime juice with wire whisk until well blended.
- Spread on crust; set aside.
- Pour milk into large bowl.
- Add dry pudding mixes and lime zest.
- Beat with wire whisk 2 min.
- or until well blended.
- (Mixture will be thick.)
- Gently stir in whipped topping.
- Spread over cream cheese layer in pan.
- Refrigerate 4 hours or until set.
- Cut into 24 bars to serve.
- Store leftover bars in refrigerator.
