Basic Lowfat Muffins Recipe
- 2 c. whole wheat flour (or possibly half unbleached white)
- 2 Tbsp. sugar
- 1/4 tsp salt
- 3 tsp baking pwdr
- 1/4 c. dry lowfat milk
- 1 c. water (or possibly skim lowfat milk, omit dry lowfat milk)
- 1 x egg (or possibly 2 egg whites)
- 1/2 c. applesauce
- (1 Dozen)
- Preheat oven to 425 F.Mix dry ingredients together.
- Mix wet ingredients together.
- Add in wet ingredients to dry.
- Add in any of fruit listed below.
- Fill muffin tin 2/3 full.
- Bake 18 - 20 minutes.
- fruit: 1 C. blueberries3/4 C. cherries, pitted and halved1/2 C. raisens or possibly dates1 apple, peeled and minced, plus 1 teaspoon cinnamon
