Fajita(ish) Quesadillas

  1. Mix your spices into a small bowl, making sure to combine everything evenly.
  2. Cut your bell pepper and shallot into thin strips.
  3. You can also use a yellow onion if you dont have a shallot.
  4. Put your bacon grease and vegetables into a skillet over medium heat and sprinkle with the spice mixture.
  5. Let cook until peppers are soft.
  6. When the veggies are almost done, put your tortilla onto a flat griddle surface.
  7. Put half of your cheese onto one side of the tortilla, then top with veggies and the remaining cheese.
  8. Fold the tortilla in half and let cook for a few minutes until golden brown.
  9. Flip and let the other side brown.
  10. Cut in half, and enjoy!
