Oolong Peach Bloom
- 4 cups water
- 2 tablespoons lightly packed oolong tea leaves
- 1 cup of fresh mint
- 2 cups peach nectar
- 3 tablespoons sugar
- 12 teaspoon vanilla
- fresh peach, wedges
- fresh mint sprig
- In medium saucepan over medium heat, bring water to just below a simmer (190 degrees F.).
- Remove from heat.
- Add tea and 1 cup mint; let steep 3 minutes.
- Strain tea.
- Add peach nectar, sugar and vanilla; mix well.
- Refrigerate until chilled.
- Serve garnished with peach wedges and mint sprigs.
