Oolong Peach Bloom

  1. In medium saucepan over medium heat, bring water to just below a simmer (190 degrees F.).
  2. Remove from heat.
  3. Add tea and 1 cup mint; let steep 3 minutes.
  4. Strain tea.
  5. Add peach nectar, sugar and vanilla; mix well.
  6. Refrigerate until chilled.
  7. Serve garnished with peach wedges and mint sprigs.
