Coq Au Vin
- 2 kg Chicken thigh fillet, into large pieces (4cm)
- 5 slice Bacon
- 8 eschalots, peeled, halved
- 4 Very small onions, sliced
- 400 grams Mushrooms, chunks
- 2 clove garlic, crushed
- 10 small potatoes, halved
- 1 1/2 cup Red wine
- 1 Litre chicken stock
- 1 1/2 tsp Dried thyme
- 1 Salt & pepper to taste
- Fry chicken pieces in a large pan until well browned on all sides.
- Set aside.
- Use the same pan to fry sliced onion and bacon.
- Drain on paper towel and set aside.
- Now throw everything into a large slow cooker, lid on.
- 7 hours on low or around 3 1/2 hours on high.
- Very tasty- enjoy
