Cheesy Chicken Baguettes
- 2 loaves Small Baguettes
- 2 packages (5.2 Oz) Boursin Cheese
- 3 whole Chicken Breasts, Cooked And Shredded
- 4 cups Mozzarella Cheese, Shredded
- 1/2 whole Red Pepper, Diced
- 1/4 cups Onion, Diced
- 6 whole Baby Portabella Mushrooms, Sliced
- Pre-heat oven to 375 degrees.
- Slice baguettes in half lengthwise and place on a baking sheet.
- Crumble Boursin cheese over baguette halves and spread as evenly as you can.
- I only used about half of the second wheel of Boursin, depending on the size of your bread, you may use more or less.
- Press the cooked, shredded chicken over the Boursin.
- Sprinkle each with about mozzarella.
- Sprinkle red pepper and onion over mozzarella and layer on mushroom slices.
- Bake for 15 minutes or until cheese is melted and bread is browned around the edges.
- Slice in fourths and serve.
