Confetti Rice

  1. Melt margarine in large saucepan on medium-high.
  2. Add onion and garlic.
  3. Cook for about 3 minutes, stirring often, until onion is soft.
  4. Add next 4 ingredients.
  5. Heat and stir for about 1 minute until rice is coated.
  6. Add bouillon powder and water.
  7. Stir.
  8. Bring to a boil.
  9. Reduce heat to mediun-low.
  10. Cover.
  11. Simmer for about 15 minutes until liquid is absorbed and rice is tender.
  12. Remove from heat.
  13. Add both peppers and green onion.
  14. Sir until just combined.
  15. Cover.
  16. Let stand for 5 minutes.
  17. Makes 4 cups.
  18. Serves 6.
