Hearty Pork Steak
- 400 grams Pork shoulder block
- 1 Salt, coarsely ground black pepper
- 1 tbsp White flour
- 1 for frying Vegetable oil
- 2 to 5 cloves Garlic (cut in half and remove the sprout inside)
- 1 as much (to taste) Finely shredded cabbage
- 2 tbsp Tonkatsu sauce (Japanese-style Worcestershire sauce or steak sauce)
- 1 tbsp Ketchup
- 2 tbsp Soy sauce
- 1 tbsp Sugar
- 1 tbsp Honey
- 1 tbsp Mirin
- 3 tbsp Sake
- 1 tsp Grated ginger
- 1 tsp Grated garlic
- 1 tbsp Grated onion
- Put the sauce ingredients in a small pan, and simmer over low heat to reduce a little.
- Cut the block of pork into half diagonally.
- Then, make 3 to 4 slits into each piece.
- Season the meat with salt and coarsely ground black pepper, and dust lightly with flour.
- Heat oil and garlic in a pan over low heat, until the garlic is just lightly colored.
- Take the garlic out and reserve.
- Turn the heat up to high.
- When the pan is hot, add the meat from Step 3, and brown well on both sides.
- Add sake (or water) to the pan so it sizzles.
- Immediately cover with a lid, turn the heat down to low-medium, and steam-fry until the pork is cooked through.
- Add the garlic from Step 4, too.
- When the pork is cooked, wipe out any excess oil and fat from the frying pan, add the sauce from Step 1 and simmer to coat the meat with it.
- When the sauce has thickened and has coated the meat, take the meat out and put on a plate with shredded cabbage on the side.
- Done.
- Eat up!
