Apricot Pork Tenderloin

  2. Preheat the oven to 425 degrees.

  4. Combine preserves, mustard, and rosemary in a bowl.
  5. Stir well and set aside.
  6. 3.
  7. Spray a baking sheet with nonstick spray.
  8. Then salt and pepper the tenderloin and place it on the sheet.
  9. Using a pastry brush, brush the apricot mixture on the tenderloin, making sure to coat the entire piece of pork.
  10. Use all but about a 1/4 of the mixture.

  12. Roast for 40-45 minutes at 425 degrees.
  13. Halfway through, brush the remaining mixture on the pork.
  14. 5.
  15. Remove from the oven.
  16. Let it stand for 5 minutes before cutting diagonally.
  17. 6.
  18. Mmm ... enjoy.
