Apricot Pork Tenderloin
- 2 whole Pork Tenderloins, 1 Pound Each
- 1/2 cups Apricot Preserves
- 2 Tablespoons Country Style Dijon Mustard
- 1 teaspoon Dried Rosemary, Chopped

- Preheat the oven to 425 degrees.
- 2.
- Combine preserves, mustard, and rosemary in a bowl.
- Stir well and set aside.
- 3.
- Spray a baking sheet with nonstick spray.
- Then salt and pepper the tenderloin and place it on the sheet.
- Using a pastry brush, brush the apricot mixture on the tenderloin, making sure to coat the entire piece of pork.
- Use all but about a 1/4 of the mixture.

- Roast for 40-45 minutes at 425 degrees.
- Halfway through, brush the remaining mixture on the pork.
- 5.
- Remove from the oven.
- Let it stand for 5 minutes before cutting diagonally.
- 6.
- Mmm ... enjoy.
