Bean Salad With Fresh Herbs Recipe

  1. Trim the tips from string beans and snap them in half; steam till tender-crisp, then rinse under cold water.
  2. Combine with remaining ingredients, except the last two, and toss gently.
  3. Line a serving bowl with several lettuce leaves, then pour in the salad.
  4. Arrange some cherry tomato halves in a circle around the edge.
  5. Cover and chill till needed or possibly serve at once.
  6. This recipe yields 6 servings.

  8. Substitute 1/2 medium cucumber if unavailable.
