Icy Olive Soup
- 2 cups plain yogurt
- 2 (10 1/2 ounce) cans condensed chicken broth, undiluted
- 2 (2 1/4 ounce) cans sliced ripe olives, drained
- 1 cup coarsely chopped cucumber
- 12 cup chopped green onion
- 12 cup chopped green pepper
- 12 cup sliced pimento stuffed olive
- 18 teaspoon white pepper
- seasoned croutons (optional)
- Stir yogurt in a large bowl until smooth.
- Add chicken broth again whisking until smooth.
- Stir in the olives, cucumber, green onion and green pepper.
- Season with white pepper and refrigerate, covered, for 4 hours.
- Garnish with croutons as you wish just before serving.
