Almond Peach Yogurt Muffins

  1. Heat oven to 400F.
  2. Place paper baking cups into 12 muffin pan cups or grease cups.
  3. Set aside.
  4. Combine margarine, yogurt, egg, fat free half & half and 1/2 teaspoon almond extract in bowl; mix well.
  5. Place flour, sugar, baking powder, baking soda and salt in another bowl; stir.
  6. Add flour mixture into butter mixture; stir just until moistened.
  7. Stir in almonds.
  8. Spoon batter evenly into prepared muffin pan cups.
  9. Bake 16-19 minutes or until toothpick inserted in center comes out clean.
  10. Cool 5 minutes in pan; remove to cooling rack.
  11. Combine powdered sugar, 1/4 teaspoon almond extract and enough milk for desired glazing consistency.
  12. Spoon glaze mixture over warm muffins.
  13. *Substitute your favorite flavor yogurt for a different flavor muffin.
