Coconut and Passionfruit Sandwiches

  1. Beat egg and sugar until thick and creamy.
  2. Fold in sifted flour and baking powder.
  3. Stir through coconut and butter.
  4. Place teaspoonfuls of mixture onto lined baking trays.
  5. Bake at 180C for 5 minutes or until golden brown.
  6. Cool.
  7. Combine lemon spread and passionfruit.
  8. Sandwich teaspoonfuls of filling between the biscuits.
  9. Serve immediately.
