Azuki Beans and Winter Squash

  1. Place azuki beans in large nonmetal bowl, and cover with water.
  2. Let soak 8 hours, or overnight.
  3. Drain.
  4. Place kombu in 1 inch of water in large saucepan.
  5. Soak 10 minutes, or until soft.
  6. Add azuki beans and enough water to cover.
  7. Put lid on pan, and bring beans to a boil.
  8. Reduce heat to medium-low and simmer, covered, 25 minutes.
  9. Add squash and salt.
  10. Simmer, covered, 25 minutes more, or until squash is soft.
  11. Stir in tamari, and sprinkle with green onions.
