Easy Rogan Josh
- 2 pounds Cubed Or Stewed Lamb
- 1 Tablespoon Olive Oil
- 2 whole White Onions
- 1/2 cups Plain Yogurt
- 3 cloves Garlic, Minced
- 1 Tablespoon Grated Ginger (or 3/4 Tablespoon Ground Ginger)
- 2 teaspoons Ground Cumin
- 1/2 teaspoons Ground Cloves
- 1 Tablespoon Ground Coriander
- 1 teaspoon Ground Turmeric
- 1 teaspoon Chili Powder
- 1- 1/2 teaspoon Ground Cardamom
- 1- 1/2 teaspoon Garam Masala
- 1 can (14 Oz. Can) Chopped Tomatoes (drained)
- 3 pinches Salt
- In a large saute pan, heat olive oil over medium heat.
- Chop both onions until fairly fine and cook in oil until soft.
- Add yogurt and stir.
- Once yogurt is incorporated, add all spices except garam masala.
- Stir until spices are distributed evenly.
- Drain tomatoes of most of their liquid and add to the pan.
- Sprinkle with salt and stir yet again.
- Add all of the cubed lamb and stir to coat all pieces.
- Cover pan and turn heat to low.
- Cooking slowly is the key!
- It will take generally an hour to an hour and a half depending on the size of the lamb cubes.
- Check after an hour, and if the lamb isnt cooked through, try cooking for 15 more minutes and checking again.
- Once the lamb is cooked through, remove the lid and allow the sauce to thicken.
- Once the sauce has thickened up to your desired level, add the garam masala and stir well.
- Serve with rice or a thick dumpling style noodle.
