Easy Rogan Josh

  1. In a large saute pan, heat olive oil over medium heat.
  2. Chop both onions until fairly fine and cook in oil until soft.
  3. Add yogurt and stir.
  4. Once yogurt is incorporated, add all spices except garam masala.
  5. Stir until spices are distributed evenly.
  6. Drain tomatoes of most of their liquid and add to the pan.
  7. Sprinkle with salt and stir yet again.
  8. Add all of the cubed lamb and stir to coat all pieces.
  9. Cover pan and turn heat to low.
  10. Cooking slowly is the key!
  11. It will take generally an hour to an hour and a half depending on the size of the lamb cubes.
  12. Check after an hour, and if the lamb isnt cooked through, try cooking for 15 more minutes and checking again.
  13. Once the lamb is cooked through, remove the lid and allow the sauce to thicken.
  14. Once the sauce has thickened up to your desired level, add the garam masala and stir well.
  15. Serve with rice or a thick dumpling style noodle.
  16. Enjoy!
