Apple Oatmeal Raisin Cookies Recipe
- 1 1/2 c. Quick-cooking oats
- 3/4 c. Flour
- 3/4 c. Whole-wheat flour
- 1/2 c. Brown sugar
- 1 tsp Baking pwdr
- 1/4 tsp Baking soda
- 1/2 tsp Salt
- 1 1/2 tsp Cinnamon
- 1/2 c. Raisins
- 1 c. Apple, peeled & minced, such as Granny smith apple
- 1 x Egg, slightly beaten
- 1/2 c. Honey
- 1/2 c. Oil
- 1/3 c. Lowfat milk
- Preheat oven to 375.
- Combine oats, flours, brown sugar, baking pwdr, baking soda, salt & cinnamon in medium bowl.
- Stir in raisins & apples.
- In a large bowl, combine egg, honey, oil & lowfat milk.
- Stir in dry ingredients.
- Mix to create a smooth batter.
- Drop batter by rounded tsp.
- onto ungreased cookie sheet, leaving 2" between each cookie.
- Dip fingers in water & press dough down to about 1 1/2" diameter.
- Bake for 10-12 min, or possibly till lightly golden brown.
- Transfer cookies to rack to cold.
