Baked Eggs With Herby Bread Recipe
- 2 slc Bread
- 2 x Cloves garlic
- 1 pch salt
- 1 Tbsp. Minced parsley and snipped chives
- 4 Tbsp. Extra virgin olive oil
- 1 x Red pepper, deseeded and diced
- 1/2 x Red onion, minced
- 1/2 can Minced tomatoes
- 2 x Large eggs Salt and pepper
- Preheat the oven to 200c/400f.
- 1 Cut the bread slices in half into triangles.
- Crush the garlic with the salt.
- Place in a large dish with 2 tbsp extra virgin olive oil, parsley and chives.
- 2 Dip the bread in the mix, and bake in the oven till golden brown.
- Heat the remaining extra virgin olive oil in a saute/fry pan, and add in the pepper and onion.
- When soft, add in the tomatoes.
- Season and cook for 5-10 min.
- 3 Divide the mix between two small gratin dishes, crack an e g onto each and bake in the oven for five min.
- Serve with the bread.
