Baked Eggs With Herby Bread Recipe

  1. Preheat the oven to 200c/400f.
  2. 1 Cut the bread slices in half into triangles.
  3. Crush the garlic with the salt.
  4. Place in a large dish with 2 tbsp extra virgin olive oil, parsley and chives.
  5. 2 Dip the bread in the mix, and bake in the oven till golden brown.
  6. Heat the remaining extra virgin olive oil in a saute/fry pan, and add in the pepper and onion.
  7. When soft, add in the tomatoes.
  8. Season and cook for 5-10 min.
  9. 3 Divide the mix between two small gratin dishes, crack an e g onto each and bake in the oven for five min.
  10. Serve with the bread.
