Grandma's Creamy Cheesecake
- 250 g sweet biscuits, crushed
- 125 g butter, melted
- 250 g cream cheese, softened
- 250 g ricotta cheese
- 3 eggs, lightly beaten
- 185 g caster sugar
- 2 tablespoons cornflour
- 1 cup sour cream
- 2 tablespoons grated fresh lemon rind
- 3 tablespoons lemon juice
- lemon curd

- Preheat oven to 160 Celcius.
- To make base: Mixed biscuits crumbs and butter in a bowl, Press into a 20cm springform tin and chill until required.
- To make filling:.
- Cream cheese and ricotta until smooth.
- Add eggs, sugar, cornflour, lemon rind and juice.
- Mix until smooth.
- Pour over refrigerated base.
- Bake for 50 minutes or until firm.
- Refrigerate until cold.
- Serve with lemon curd and cream.
