Casa Crepes

  1. In a small saucepan heat the pie filling over medium heat.
  2. In a blender combine the eggs, and cottage cheese and flour.
  3. Blend until well combined.
  4. Preheat a frying pan over medium-high heat, adding a small amount of oil.
  5. Pour about 1/3 cup of batter into the frying pan and tilt to make a thin crepe.
  6. Cook until bubbles rise to the top and the crepe appears dry; turn.
  7. Cook the other side until browned.
  8. Continue until all of the batter is used.
  9. Spoon the pie filling down the middle of each crepe.
  10. Fold over and dust with confectioners sugar.
