White Fruitcake
- 1 lb butter
- 2 cups sugar
- 8 eggs
- 1 lemon, juice and rind of, grated
- 3 cups flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 12 lbs white raisins
- 1 lb red glazed cherries
- 1 lb green glazed cherries
- 12 lb blanched almond
- 12 lb cut mixed peel
- 12 lb cut citron
- 12 lb pineapple ring
- 1 cup flour (for dusting fruit)
- Prepare and dust fruit with one cup flour.
- Cream butter and sugar.
- Add eggs, juice and rind of lemon.
- Combine flour, baking powder, and salt.
- Add mixing well.
- Add prepared fruit.
- Put in greased tins which have been lined with one layer of brown paper and one layer of waxed paper.
- bake 300F reducing heat to 275F after first half hour of baking to prevent cake from becoming too brown.
- Cooking time approx 3 hours.
