No Need for Baking Soda or Nails! Delicious Stewed 'Kuromame' Black Soybeans

  1. Put the seasonings and water in a pot, then bring to a boil.
  2. Rinse the kuromame, then add to the pot.
  3. Cover with a lid, then let sit for about 12 hours.
  4. Bring the beans to a boil, reduce to low-medium to low heat, and simmer.
  5. While it's simmering, add water 4 or 5 times, add about 1 cup of water (to prevent the water from boiling down).
  6. Remove from heat.
  7. Cover with a lid, then let sit for about 12 hours.
  8. By repeating the process of heating, then letting it sit for 12 hours, the flavors will absorb well, making it tasty!
