Tuscan Tomato Bread Soup

  1. Re-hydrate onion (if using dried).
  2. Place bread into bowl & mix with Chicken Broth.
  3. Saute onion in ~1 tablespoon Olive Oil until just starting to brown.
  4. Mix in Garlic Powder & allow to cook for 1 minute more.
  5. Add tomatoes (and their liquid), Basil, Parsley, & Oregano.
  6. Add Balsamic Vinegar.
  7. Add Bread & Chicken Broth.
  8. Cook on medium low heat for ~10-15 minutes, stirring occasionally.
  9. Serve topped with Parmesan Cheese.
  10. Puree in blender for smooth soup.
