Quinoa-Stuffed Mushrooms

  1. Preheat oven to 350 F.
  2. Prepare quinoa according to package directions and when its done place it in a medium size mixing bowl.
  3. Combine quinoa with olive oil, garlic, parsley and Parmesan cheese.
  4. Stuff mushroom tops with the quinoa mixture and place them in an 8x8 baking dish.
  5. Add enough water into the baking dish so mushrooms are covered halfway deep.
  6. Put dish into the oven.
  7. Bake mushrooms for 30-40 minutes or until lightly browned.
