Quinoa-Stuffed Mushrooms
- 1 cup Quinoa
- 1/4 cups Olive Oil
- 8 cloves Garlic, Minced
- 1/2 cups Fresh Parsley, Chopped
- 1/4 cups Grated Parmesan Cheese
- 10 whole White Mushrooms; Stems Removed And Wiped Clean With A Wet Paper Towel
- Preheat oven to 350 F.
- Prepare quinoa according to package directions and when its done place it in a medium size mixing bowl.
- Combine quinoa with olive oil, garlic, parsley and Parmesan cheese.
- Stuff mushroom tops with the quinoa mixture and place them in an 8x8 baking dish.
- Add enough water into the baking dish so mushrooms are covered halfway deep.
- Put dish into the oven.
- Bake mushrooms for 30-40 minutes or until lightly browned.
