Salmon & Spinach Quinoa (Gluten-Free)
- 150 grams Salmon fillets
- 1 tbsp White wine or sake
- 250 ml Quinoa
- 1 tbsp Olive oil
- 1/4 Onion (large) (minced)
- 1 clove Garlic (minced)
- 7 Mushrooms (thinly sliced)
- 3 bunches Spinach (roughly chopped)
- 1 Salt
- 1 dash Pepper
- Salt and pepper the salmon and sprinkle with white wine or sake.
- Wash all the vegetables and cut.
- Put the quinoa and 500 ml of water into a pot.
- Turn on the heat and bring to a boil.
- Lay the salmon on top of the quinoa, cover and turn down the heat to low.
- Cook until the liquid is gone, for about 10-15 minutes.
- While the quinoa is cooking, add olive oil to a frying pan.
- Heat the oil and add the onion and garlic.
- Stir-fry for around 2 minutes.
- Then add the mushrooms and stir-fry.
- Finally, add the spinach and stir-fry until it wilts.
- Adjust the seasoning with salt and pepper, and then turn off the heat.
- When the quinoa is done cooking, remove it from heat.
- Discard the salmon skin.
- Flake the salmon flesh with a fork and mix into the quinoa.
- Add the stir-fried vegetables to the quinoa and mix.
- Adjust the seasoning with salt and pepper.
- Serve with love and gratitude!
