Armenian Lentil Soup Recipe
- 1 c. minced onion
- 1/2 c. sliced carrots
- 1/2 c. sliced celery
- 3 c. peeled, cubed eggplant
- 1 c. diced green pepper
- 6 clv garlic, chopped
- 6 c. stock (I use chicken)
- 1 1/2 c. lentils
- 1 1/2 c. minced tomato
- 4 ounce dry apricots, sliced (yes!)
- 1/4 tsp cinnamon
- 1/4 tsp allspice
- 1/4 tsp cayenne
- 1 Tbsp. paprika
- 1 1/2 tsp salt
- 3 Tbsp. parsley
- 1 Tbsp. mint
- Saute/fry Part 1 in extra virgin olive oil till lightly browned.
- Add in Part 2.
- Simmer till lentils are tender.
- Adjust seasonings to your taste and Garnish.
