Blueberry Smoothie
- 1 avocado, peeled, halved and pitted
- 1 frozen peeled banana, cut into 2-inch chunks
- 1 1/2 cups blueberries
- 1 cup coconut water
- 1 cup frozen chopped collard greens
- 1 cup frozen pineapple chunks
- 1 tablespoon freshly squeezed lime juice
- 1/2 teaspoon grated fresh ginger
- Special equipment: a high-powered blender, optional
- In a carafe of a high-powered blender, combine the avocado, banana, blueberries, coconut water, collard greens, pineapple, lime juice and ginger.
- Blend until thick and creamy.
