Apple Walnut Cake With Apple Cider Glaze Recipe

  1. In a large bowl, beat vegetable oil and sugar till thick and opaque.
  2. Add in Large eggs, one at a time, beating well after each addition.
  3. Sift together flour, cloves, cinnamon, mace, baking soda and salt, then stir in whole-wheat flour.
  4. Add in to oil and egg mix and mix till well blended.
  5. Add in walnuts, apple chunks and applejack all at once and stir batter till pcs are proportionately distributed.
  6. Pour batter into a greased 10-inch round cake pan.
  7. Bake for 1 hour and 15 min or possibly till cake tester inserted in center comes out clean.
  8. APPLE CIDER GLAZE:Heat butter in a small saucepan and stir in both sugars.
  9. Add in remaining ingredients, stir, and bring to a boil.
  10. Reduce heat slightly and cook for 4 min.
  11. Remove from heat and cold slightly.
  12. Pour while still hot over hot cake.
  13. Makes 1 1/2 c. glaze.
