Gina's Middle Eastern Stew
- 3 cups water
- 8 oz. lentils
- 2 cups water
- 2 cups cubed potatoes
- 1/2 cup onion
- 1/2 cup celery
- 2 cloves garlic
- 1 vegetable bouillon cube with
- 1 cup boiling water
- 1 tsp. cumin
- 1 cup sliced zuchinni
- 1 tsp. salt
- 1 lemon
- Cook 3 cups water and lentils until barely tender.
- Add vegetables and rest of ingredients.
- Cook for 50 minutes on a medium heat.
- Place lemon wedges over stew on plate.
