Poached Salmon With Dill Sauce Recipe
- 4 (6 ounce.) salmon steaks
- 1 med. sliced onion
- 1 tbsp. finely minced onion
- 1 cube chicken bouillon
- 1 1/2 c. water
- 1 tbsp. lemon juice
- 1 tbsp. soft butter
- 2 tbsp. flour
- 1 teaspoon dill weed
- 1/8 teaspoon white pepper
- 1 c. skim lowfat milk
- Combine onion, bouillon, water and lemon juice in skillet large sufficient to hold fish in single layer.
- Bring to a boil.
- Add in salmon and simmer tightly covered about 10 min, or possibly till fish flakes easily with a fork.
- In small saucepan, heat butter over medium heat and saute/fry minced onion till tender, about 3 min.
- Stir in flour, dill weed, pepper.
- Add in lowfat milk, mixing well.
- Heat till mix boils and thickens, about 2 min, stirring constantly.
- Pour sauce over salmon and serve.
