Special Vegan Chili
- 2 cups cooked mixed beans (1 19oz can)
- 1 12 cups canned diced tomatoes (with juice)
- 12 cup red bell pepper, chopped
- 13 cup yellow onion, chopped
- 13 cup cremini mushroom, minced
- 13 cup carrot, minced
- 2 garlic cloves, minced
- 1 tablespoon chili powder
- 12 tablespoon ground flax seeds
- 12 teaspoon cumin
- 12 teaspoon dried oregano
- 2 pinches black pepper
- Drizzle a bit of oil on a frying pan and set heat to medium.
- Saute onions, carrots, garlic and red bell peppers until they start to brown.
- Add the mushrooms and cook for another minute, then transfer sauteed vegetables to a pot.
- Add the rest of the ingredients and stir well.
- Bring to a boil, then simmer uncovered for about 30 minutes, stirring once in a while.
- Serve hot with pita bread.
