White Bean & Spinich Soup With Smoked Sausage
- 2 teaspoons olive oil
- 1 cup chopped onion
- 1 tablespoon minced garlic
- 1 teaspoon crumbled sage
- 2 (15 ounce) cans navy beans, rinsed & drained
- 2 (15 ounce) cans chicken broth
- 1 (10 ounce) packagechopped frozen spinach, thawed
- 14 cup orzo pasta, cooked (rice shaped pasta)
- 2 12 cups smoked sausage, sliced 1/3 inch thick
- grated parmesan cheese
- Heat oil in 3-quart pot over medium heat.
- When hot, add onion, garlic & sage.
- Cook & stir often for approximately 5 minutes.
- Add beans, chicken broth, spinich and smoked sausage.
- Cooked covered for about 10 minutes.
- Stir in cooked orzo & cook for an addtional 5 minutes.
- Serve hot with parmesan cheese sprinklted on top.
