Rum Muffins

  1. In a large bowl, mix all ingredients, except brown sugar.
  2. Beat for 1/2 minute.
  3. Fill 12 greased medium muffin cups 2/3 full.
  4. Sprinkle tops with brown sugar.
  5. Bake 15 minutes in a 400 degree oven.
  6. Serve warm.
