Jicama Rice Salad
- 3 cups cooked rice
- 1-1/2 cups thin jicama strips (2x1/4 inch)
- 1 cup cut-up fresh green beans (1 inch), cooked until crisp-tender
- 1/2 cup chopped red pepper
- 1/4 cup chopped cilantro
- 1/2 tsp. salt
- 3/4 cup KRAFT Cilantro Pepper Flavored Ranch Dressing
- Mix all ingredients except dressing in large bowl until well blended.
- Add dressing; toss to coat.
- Cover.
- Refrigerate several hours to allow flavors to blend.
- Season with additional salt and black pepper to taste, if desired.
