Easy Refrigerator Yeast Rolls
- 1 c. shortening
- 2 tsp. salt
- 3/4 c. sugar
- 1 c. boiling water
- 2 eggs, beaten
- 2 pkg. RapidRise dry yeast
- 1 c. warm water
- 6 c. unsifted flour
- Pour boiling water over shortening, sugar and salt.
- Blend and cool.
- Add beaten eggs.
- Sprinkle yeast into warm water and stir until dissolved, then add to mixture.
- Add flour; blend well. Cover and place in refrigerator for at least 5 hours.
- Dough must be in large mixing bowl as it rises slightly in refrigerator. This will keep a week to 10 days and may be used as needed.
- Three hours before using rolls, roll into desired shape, using enough extra flour to make dough easy to handle.
- Place in greased pan; allow to rise at room temperature for 3 hours or until double in size.
- Bake in 400u0b0 oven for 15 to 20 minutes.
