Vegetable Beef Soup Recipe
- 1 meaty soup bone
- 2 carrots (peeled, washed & minced)
- 1 can tomatoes
- 1/4 c. barley
- 1 onion, minced
- 1 c. celery, minced
- 1/4 can corn
- 2 c. water
- Salt & pepper to taste
- Cover soup bone with water; bring to boil.
- Add in carrots, celery, tomatoes, juice, salt and pepper.
- Let simmer till meat falls from the bone.
- Cold and scrape off fat.
- Heat again, add in barley and cook till barley is done.
- Serve piping warm.
