15-Minute Vegetarian Stroganoff

  1. Combine all ingredients except sour cream in a large non-stick skillet over medium-high heat.
  2. Bring to boil; reduce heat to medium-low.
  3. Simmer 6 minutes; stir gently.
  4. Simmer 6 more minutes, or until noodles are tender.
  5. I find that if I don't stir halfway through cooking time, the noodles cook a little unevenly.
  6. Remove from heat; stir in sour cream.
