Mussels with Sausage, Coconut Milk and Lime

  1. Heat oil in heavy large saucepan over medium-high heat.
  2. Add onion, sausage, lemongrass, ginger and garlic and saute 5 minutes.
  3. Add all remaining ingredients except cilantro and mussels and bring to boil.
  4. Reduce heat and simmer 5 minutes.
  5. Mix in half of cilantro.
  6. Meanwhile, place mussels in large pot.
  7. Cover and cook over medium heat until mussels open and release their juices, about 5 minutes (discard any mussels that do not open).
  8. Divide mussels among shallow soup bowls.
  9. Stir any mussel liquid into coconut-milk mixture; ladle over mussels.
  10. Sprinkle with remaining cilantro.
